This grain-free bread recipe calls for only 5 ingredients! I’ve experimented with a lot of gluten-free recipes in the past years, and some grain-free ones too. And these are the most tricky to get right I’ve found. This recipe evolved from a chestnut flour muffin recipe I found here: http://www.fitnesstreats.com/2013/05/fluffy-grain-free-muffins/
This bread tastes a bit like a cake but as the flours provide natural sweetness there is no need to use honey or other sweeteners. And it’s very easy and quick to make.
1/2 cup chestnut flour
1/2 cup tiger nut flour
2 tsp gluten-free baking powder
2-3 Tbs almond butter
4 large eggs (or 5 if comes up too dry or crumbly)
Put all the ingredients in a bowl. Mix with a hand mixer until well combined.
Bake at 160 degrees Celcius for 30-35 minutes, or until a skewer comes out clean.
It keeps in the fridge for a few days.
Serving suggestion: Spread with butter or coconut butter to make it dairy free. Serve with a sliced apple on the side or homemade yoghurt.
